Chef Edward C. Schmidt’s passion for great food and beautiful places has kept his culinary inspiration growing and evolving for over a decade here in Colorado. Chef Schmidt attended Western Culinary Institute in Portland, OR with the intention of returning to Colorado to settle. Upon graduating with honors in 1992 and with his career on the front burner, it was clear that Colorado would have to wait and New York would be the next stop. During the following four years, Chef Schmidt worked as a Chef de Partie and Sous Chef at the stoves of New York Times rated two and three star restaurants. These experiences set the foundation for the development of Chef Schmidt’s intuitive approach to food and cuisine that is at once simple in preparation and yet complex in flavor with a strong leaning towards French technique with Global influences.

In 1995 Chef Schmidt returned to Colorado and fell in love all over again with this beautiful state. The pristine beauty and culinary inspiration confirmed that this was going to be the final stop on his culinary journey. Since his return, he has worked as a Chef de Cuisine, Executive Chef and Private Chef in Denver, Boulder and of course, Aspen and Snowmass..  

Aside from cooking, Chef Schmidt has great passion for rock climbing, fly fishing, skiing and spending time with his family.
